These chocolate cookies not only help your sweet tooth craving but they also have a slow glycemic index. The coconut sugar has a low glycemic index and will not spike your sugar like normal sugar. I added almond flour to enrich the fiber and protein content of the cookie.

Ingredients
- 1/2 cup of vegetable oil
- 1 cup of coconut sugar
- 1/4 cup of maple syrup
- 3 tblsp of milk
- 1/2 cup of unsweetened cocoa powder
- 1/3 cup of almond flour
- 1 1/3 cups of flour
- 1 tsp of almond extract
- 1 tsp of baking soda
- 1/2 tsp of cinnamon
topping (optional)
- 1/3 cup of sugar
- 1 tsp of cinnamon
Directions:
- Preheat your oven to 350 F.
- line two baking sheets with parchment paper
- Mix topping ingredients together and set aside
- Mix wet ingredients together
- slowly add the dry ingredients together.
- Make walnut sized balls
- roll them into the sugar topping
- flatten balls on parchment paper
- Bake for 10-12 minutes
