Chocolate Cookies

 

These chocolate cookies not only help your sweet tooth craving but they also have a slow glycemic index. The coconut sugar has a low glycemic index and will not spike your sugar like normal sugar. I added almond flour to enrich the fiber and protein  content of the cookie.

I am not a dietician or claim to be a professional chef, but i found playing around with ingredients helpful. We are all trying to find the right balance for our bodies. I hope this recipe is helpful and delicious as it was for me.

Ingredients

  • 1/2 cup of vegetable oil
  • 1 cup of coconut sugar
  • 1/4 cup of maple syrup
  • 3 tblsp of milk
  • 1/2 cup of unsweetened cocoa powder
  • 1/3 cup of almond flour
  • 1 1/3 cups of flour
  • 1 tsp of almond extract
  • 1 tsp of baking soda
  • 1/2 tsp of cinnamon

topping (optional)

  • 1/3 cup of sugar
  • 1 tsp of cinnamon

Directions:

  • Preheat your oven to 350 F.
  • line two baking sheets with parchment paper
  • Mix topping ingredients together and set aside
  • Mix wet ingredients together
  • slowly add the dry ingredients together.
  • Make walnut sized balls
  • roll them into the sugar topping
  • flatten balls on parchment paper
  • Bake for 10-12 minutes
